This 'Collection' post is a highlight I look forward to every month, Holly - this one is a box of delights and a fantastic read, as always!

That soup sounds amazing - gosh! We have soup for lunch every day during the week - I heat it up at breakfast time for our Thermos flasks, and then we've got lunch available for wherever we happen to be that day, whether at work or at home or out on a walk. I make a huge batch every Saturday evening at the same time as I'm cooking our 'Sunday lunch' (we Holdens enjoy this British tradition for dinner on a Saturday instead). I've got the process down to a fine art - diced onions, celery, broccoli and cabbage stalks waiting ready in a big pan, then I strain the boiling liquor from the veg in our meal straight into it, and set it to boil while we eat. Afterwards I add any leftover veg and meat that I haven't hived off for future evening meals (and I always cook tonnes, not just because of Project Soup but because I always want leftover meat etc for additional meals) to the pan, simmer it, blend it, cool it overnight and freeze it in one- and two-portion blocks. Saves sooooo much time during the week!

I love that you're taking care of yourself - that's so important. I'm glad that you're getting to the bottom of your pain, and how amazing that the changes you've been making are already showing themselves! 🙌

Oh, and I'll say right now that I think the 'nothing box' video has made sense of a LOT of things for me...! 😏

I'm going to add these prep items to my Thursday/Friday tasks--cutting all the veggies in preparation for soup-making. I've been taking my soup in a thermos the last month as I've been on the go a lot. I forget how handy those things are!

Isn't the "nothing box" the wildest thing?!

It's amazing that it takes so little time to chop all the soup 'extras' at the same time as doing the veg prep for the meal itself - but it SAVES so MUCH time!

The 'nothing box' is CRAZY and wonderful! I laughed knowingly through most of the video, then thought 'hang on, I can really learn something from this...!). Such a great post - thank you so much, Holly! You always make my Saturdays with your posts, honestly! 😊😊😊
